Leave the pie sheets to thaw for approx. 30 minutes.
Peel the pears, cut them in half and remove the stalks, then slice them. Squeeze the lemon and mix the juice with the brandy and sugar, then pour over the pears.
Mix the cream well with the honey and vanilla sugar. Preheat the oven to 250 degrees. Rinse a tray with water but do not wipe.
Spread the pie sheets on a flour shredder, then place in the pan. Pour the mixture over the cream, but leave a margin of 1 cm. Place the pear slices on top of each other so that they are half covered.
Put in the hot oven and bake for approx. 30 minutes. Leave to cool, sprinkle with powdered sugar and serve.
