For the strawberry foam, boil over low heat, a few finely chopped strawberries, along with a little sugar and water, until the liquid decreases, leave to cool, then put in a blender. Refrigerate until used.

Beat with the mixer, the egg whites with a pinch of salt until they froth, gradually add the sugar, then the yolks and the oil, mixing with the mixer. Then add flour and baking powder, mixing with a spoon from bottom to top, so as to obtain a soft, fluffy and airy dough.

Pour the composition into a muffin tray (in which you put baking paper) or the silicone form that you place in another tray, so that you can easily manipulate it. If you use a muffin tray, you get more muffins, if you use a silicone pattern with a flower pattern like I had, you get fewer muffins, being bigger.

In each muffin, fill a piece of dark chocolate (or milk, if you like more). Decorate with unsalted hazelnuts, chopped with a knife. Put the tray in the oven, on the right heat, for 20-25 minutes or until golden. When ready, leave to cool.

Depending on the shape used and how you filled them, you get about 12 or 14 muffins.

The muffins are decorated with strawberry foam. I found them very tasty with those hazelnuts that were browned in the oven and with the chocolate inside that melted and flowed when bitten by the muffin. You no longer need the cream. They're not nauseous either, so they're lighter.

5 egg whites
10 tablespoons powdered sugar
1 tablespoon vinegar
1 tablespoon starch
300 ml liquid cream
250 gr strawberries

Method of preparation

Whisk the egg whites. When they have hardened, add 5 tablespoons of powdered sugar, starch and vinegar and continue beating until you get a shiny and firm meringue.

We put baking paper in a round tray and with the help of a spirit we place the meringue trying to give it a shape as beautiful as possible.

Put in the oven on a very low heat on the top step of the oven. The meringue must dry, be crispy on the outside and soft, gummy on the inside. Mine has browned a little because I don't have such a good oven. I first tried to bake in the electric oven but I got confused in the programs and my meringue melted, so I had to start over.

Mix the whipped cream and when it starts to harden, add 5 tablespoons of sugar and continue mixing. Place the whipped cream with a spirit on top of the meringue top.

Cut the strawberries into slices and place them over the whipped cream. We cut it into slices like a cake.

On the other hand, it does not require plates and cutlery, napkins being enough.

I made these muffins for a charity event (Volunteer Day). They were very successful due to the fluffy and airy consistency of the chocolate taste, balanced by the sour cherries. Until I made the cake from popcorn dough where I put cut strawberries, this time I combined them with some chocolate muffins and I made a strawberry glaze to lick your fingers. Try it and it's easy!

Depending on your preferences and how you want to look, you can sprinkle strawberries on top of the chocolate before it dries: coconut flakes, grated chocolate, sprinklers or small candies. You can also melt white chocolate, which with the help of a POS with a very small head to use as a decoration over strawberries. You can also make color games using white, dark and milk chocolate.
