I used bacon and smoked ham as a smoker. If you are going to put large pieces of smoked meat in cabbage soup, especially with bone, they must be boiled beforehand and the smoked meat will be broken or cut after boiling into small pieces, then continue cooking as shown below.

In 2 tablespoons of oil I hardened the bacon and the smoked bacon, then I took them out and left them on a plate until they return to the food. In the same pan I hardened 1 finely chopped onion. When it became soft and glassy I put a teaspoon of flour and mixed until the flour hardened a little.

I added the pepper and the carrot and I continued sautéing for another 1 minute, then I put a little water (around 100ml) and left it on low heat until it evaporated. In a small pot (or kettle) I put 200 ml of boiling water with 1 tablespoon of cumin seeds.

Over the onion with carrots and peppers I poured the sour cream for cooking, I mixed a little and I took the pan off the heat. Meanwhile, the cumin was boiled, so I strained the tea.

I boiled 1 l of chicken soup and 1.5 l of water (or 2.5 l of water) with a large onion and a slice of celery. I let it boil for a few minutes.

I cut the cleaned cabbage cleaned from the outer leaves and the back. I rubbed it with a little salt, then I put it in hot soup. I added peppercorns, a bay leaf, a clove of garlic and let it boil for 10 minutes. During this time, boil the corcodus (if you have it in the freezer). If you use lemon juice for souring, make sure that the lemon is one with a thin skin, because it has more juice. After 10 minutes of boiling the cabbage I added the smoked meat, cumin tea and corcoduse juice in my case (you can only put lemon juice if you are not used to souring corcoduse soups).

I put over the cabbage the vegetables hardened with sour cream and I mixed. I let it simmer for 10-15 minutes on low to medium heat. Cabbage should be soft, but not fluffy, after this time. Before stopping the fire I tasted to see if the cabbage soup still needs salt. I stopped the fire and added green larch (it can be dry or you can put green parsley).

Smoked cabbage soup is very good!

I immediately ate a plate of hot soup, accompanied by a hot pepper.

Ingredients for the soup:

  • 500 g beans
  • 650 g smoked ribs
  • 1 celery
  • 1 parsnip
  • 2 carrots
  • 2 onions
  • 2 peppers
  • 1 sprig of thyme

Method of preparation:

  • Before preparing the soup, choose the beans, clean them of impurities, wash them in some water, and let them soak overnight.
  • The next day you can boil the beans. It is recommended to change the water twice until the final juice (the one in which you will put the other vegetables). Thus, boil the beans and when the water boils, drain it from the pot and replace it with cold, clean water. Do this step twice.
  • In the third water you can add the pieces of ribs and leave everything to boil, over low heat.
  • While the soup pot is on the fire, clean the vegetables and cut them into cubes.
  • After 30 minutes, add the vegetables to the soup together with the thyme sprig.
  • Towards the end, after the vegetables have boiled, put the broth and let the soup boil for about 15 minutes.
  • Finally, immediately after turning off the heat, add salt to taste and the desired greens.

Method of preparation

Wash the vegetables, chop finely or grate them and boil them in the soup pot. Scald the ladder and portion it. When the vegetables are almost cooked, put the pieces of ladder. It fits the salt carefully because, in general, the smoked meat is slightly salty, and the cabbage juice as well.
