There Cream of Corn is a colorful first course, easy and quick to make that will win you over with its delicate and slightly sweet flavor. Creamy and tasty, the corn soup can be served both hot and cold, as a single dish or to accompany other dishes. After the binges of these holidays, a nutritious and "healthy" dish was what we needed, a kiss to all and if you try this cream of corn, let me know what you think.
How to make cream of corn
Wash, peel and cut the potatoes into small pieces. Finely chop the spring onion.
Put the onion in a saucepan with the butter and brown it over low heat until it is golden.
Then add the potatoes and corn (set aside a few grains of corn for the decoration of the dishes) in a casserole, stir to flavor the sauce, then cover with the boiling vegetable broth and add salt.
Cook over low heat for about 30 minutes. If necessary, add more broth as it will be absorbed during cooking.
Now blend everything with an immersion mixer until you get a smooth cream.
Season with salt, add the cream and stir to mix.
Serve the corn soup on plates by adding chopped basil and sprinkling with pepper.
