Mimosa truffles are my proposal this year to celebrate Women's Day. After having prepared the classic cake, risotto, pizza and cupcakes, I was missing the truffles to complete the "mimosa" theme;) Very easy to make, cheerful and very greedy, these truffles are the ideal dessert for March 8th . You can prepare them with a sponge cake prepared ad hoc, with a few slices of leftover donut or with some scraps of dessert, flavored with lemon and coconut, only with white chocolate or with limoncello, the choice is yours. How to make mimosa truffles
Start by preparing the sponge cake.
Whip the eggs and sugar for at least 20-30 minutes.
When they begin to be well whipped, add the grated lemon peel.
Finally, when they are completely whipped and stable, start adding the flour (previously sifted together with the yeast) by spoonfuls.
Continue to whip until the mixture is very homogeneous and thick, then pour it into a mold lined with parchment paper.
Level well, then bake in a preheated static oven at 180 ° C and cook for about 30 minutes.
Remove from the oven and let cool.
Cut 2/3 of the sponge cake (about 200 g) into pieces and crumble it in a bowl.
Melt the white chocolate (120 g) in a bain-marie or in the microwave.
Add coconut, limoncello, grated peel and chocolate to the sponge cake and mix.
Add a couple of tablespoons of milk if needed.
Divide the mixture into 15-20 balls, pressing and shaping it with your hands.
Work the remaining sponge cake (about 100 g) as previously done: crumble it and mix it with the dye.
Melt the remaining white chocolate (150 g) in a double boiler or in the microwave, and use it to dip the truffles, one at a time, completely covering them.
Pass all the truffles in the crumbs of sponge cake.
Leave to dry for at least 30 minutes in the fridge or 1 hour at room temperature, then place in the baking cups and serve.
