Even if there are 8 days left to my wedding, I will not abandon you and this Monday I want to post this truly remarkable eggplant quiche ... certainly it is not a light recipe but it is a real pleasure.I think that from now on I will be difficult to cook again, so while waiting to fix the photos I took at the Babà I'll post this savory pie which I think will be the penultimate recipe that I will post as a maiden :(
How to make Quiche with eggplant
Wash the aubergines, peel them and cut them into cubes, then brown them in a pan with a drizzle of oil and set them aside.
Line a baking sheet lined with baking paper with the puff pastry.
Evenly distribute the aubergines on the bottom of the pastry.
Cut the mozzarella into cubes and spread it over the aubergines.
In a bowl, beat the eggs together with the Parmesan, milk, cream, salt and pepper.
Sprinkle the quiche with the beaten egg.
Fold the edges of the puff pastry inwards and bake the quiche with the aubergines in a preheated oven and cook at 180 ° C for about 30 minutes.
Let it cool, then cut the aubergine quiche into slices and serve
