Enchiladas with sausages are a typical Mexican dish. These are tortillas rolled up like a cannelloni and stuffed with onions, sausages and a spicy sauce called "salsa enchilada". They are baked in the oven covered with sauce and gruyère cheese. This Mexican recipe I prepared with my friend Elena during one of our themed dinners. Of all the Mexican recipes I've tried so far, this is my favorite one: P Have a good start to the week everyone!

How to make Enchiladas with sausages

In a wok, sauté the onion cut into icing. Then lift them with a slotted spoon and keep them aside.

In the same wok, brown the crumbled sausages.

Add the spices (cumin, pepper and paprika), mix, let it cook for a couple of minutes and set aside.

Now prepare the enchiladas sauce by putting the spices together with the tomatoes and peppers in a blender and blending until creamy. Fry the peeled and chopped onion and garlic in the oil, then add the cream. Season with salt and pepper, add the lime juice and cook for about twenty minutes over low heat.

Spread the enchilada sauce on each flour tortilla. In the center of the tortilla, place a few tablespoons of crumbled sausage.

Add a couple of teaspoons of wilted onions and the chopped cheese.

Close the tortillas like a cannelloni and arrange them on a baking sheet (I used cooking on the Romagna text, using the glass bell, and the result was excellent).

Cover the enchiladas with the remaining enchilada sauce and the Gruyere cheese and cook for 10 minutes at 180 ° C in a preheated oven.

Take the Enchiladas out of the oven with the sausages and bring them to the table.
