Now add the almond flour and the 00 flour.
Add the warmed melted butter and continue to whisk until the mixture is smooth and homogeneous.


Finally add the egg whites previously whipped until stiff.
Incorporate the egg whites with a wooden spoon, stirring gently until the mixture is fluid.

Grease and flour the molds and pour half the biscuit dough into each one and bake at 200 ° C for 10 minutes in a preheated oven.


We will thus obtain 2 disks of biscuit dough which we will leave to cool on a plane.

Let's go now to assemble the ricotta and pear cake ...

Place a biscuit disc on the base of a springform pan and pour the ricotta and pear cream on its surface.

Level the cream as much as possible.

Now cover with the other disc of biscuit dough and exert a little pressure on the surface to ensure that the filling is the same height in all points. Place the cake in the fridge for 2 hours.

Prepare some caramelized pears by putting them in a pan with the sugar.

Remove the ricotta and pear cake from the mold, sprinkle with icing sugar, decorate with the caramelized pear slices, place on a serving dish and serve.
