These rice balls, in addition to being a delicious and easy to prepare appetizer, are also a brilliant idea to reuse leftover rice. The first time I made them they went like hot cakes and so, even if I don't have any risotto left over from the previous evening, I often make them;) In this recipe I simply used boiled rice, flavored with saffron, butter and Parmesan, a little 'of parsley, I then added diced mozzarella and eggs to tie everything together, but you can use the recipe as a base to add other ingredients as well.The next time you have some boiled rice left and you don't know what to do with it, try this recipe and let me know if they're not a great idea! How to make rice balls

Cook the rice in a pot with boiling salted water and drain it al dente.

Put it in a bowl with the egg, saffron, chopped parsley, butter and Parmesan.

Mix all the ingredients, then add the diced fior di latte.

With wet hands, form the meatballs and place them gradually on a plate.

Then pass them first in a lightly beaten egg and then in breadcrumbs.

Finally fry them in a pan with a little hot seed oil, turning them to brown them on all sides.

Serve the rice balls hot
