There pasta with cream of yellow cherry tomatoes and speck it is a very quick first course to make and very very tasty. Making it is really simple, you just need to cook the tomatoes in a pan for a few minutes and then blend them to obtain a cream. To dampen the sweet taste of the yellow tomato, I added cubes of crispy speck and chopped pistachios, a truly delicious flavor mix!
How to make Pasta with cream of yellow tomatoes and speck
Wash the cherry tomatoes and remove the stalks, cut the speck into strips, chop the pistachios.
Heat some oil in a large pan and brown the chopped onion. Now cut the yellow tomatoes in half and add them to the pan. Cook for about ten minutes with a lid.
Then put them in a blender and blend them until you get a cream.
Cook the pasta in abundant salted water.
Now brown the speck cubes in a pan with a drizzle of oil. Drain the pasta al dente and pour it into the pan.
Add the yellow cherry tomato sauce and sauté everything in the pan.
Serve the busiate on plates by adding the chopped pistachios and diced crispy speck to decorate your dishes.
