Laugenbrot sandwiches are small rolls characterized by a soft crumb and a crust covered with salt or seeds. Typical of the tradition of South Tyrol, Austria and Germany, they are the brothers of the most famous pretzels, and they are of an unparalleled goodness;) The first time I saw the laugenbrot sandwiches was in the cartoon by Heidi (there do you remember the cartoon? I couldn't stand it to be honest, nevertheless I was always fascinated by the proposed landscape and the sandwiches that Peter ate), then I tasted them for the first time during my holidays as a child in Trentino, but true love was born this year, when I was in Munich for the Oktoberfest, these sandwiches sprinkled with a veil of salted butter and accompanied by a mug of beer, literally conquered me. So, once I got home, I decided to reproduce them, and this is the fantastic result! So I leave you to the recipe of this Tyrolean / Bavarian bread, you do, and I wish you a fantastic day.

Method

How to make laugenbrot sandwiches

For boiling

Put the flour and sugar in a bowl, mix, then make a hole in the center and put the water and yeast and start kneading.

Then add the chopped butter and salt.
Knead everything and knead the dough for about 20 minutes until you get a soft and homogeneous dough.

Make a ball and put it to rest in a covered bowl for 1 hour

Once the dough has risen, divide the dough into pieces of about 40 grams

Then work each piece of dough into balls. Put the sandwiches obtained on a baking sheet covered with parchment paper and let them rest for 30 minutes
Put a pot on the stove with water, when it reaches the boiling point, add salt and baking soda.
Then dip a few rolls at a time and boil for 30 seconds.

Drain them with a slotted spoon and place them on the baking sheet covered with parchment paper.

Immediately cover the daddies with chopped coarse salt, sesame, pumpkin and poppy seeds, then with a sharp and smooth knife, make two horizontal cuts on the sandwiches.

Bake the laugebrot sandwiches in a preheated oven at 220 ° for about 15/20 minutes
