The Sicilian pesto it is a fresh and fragrant condiment, typical of beautiful Sicily. After the recipe for pesto alla trapanese, I tried my hand at preparing this tempting Red pesto, made with tomatoes, ricotta, pine nuts, garlic and fragrant basil.
This pesto is mostly used as a sauce for pasta but also spread on bruschetta I find it delicious: P.
How to make Sicilian pesto
Clean the tomatoes, cut them in half and remove the seeds and the vegetation water.
Then put them in a bowl.
Now add the garlic, pine nuts, parmesan and basil and use an immersion blender at minimum speed.
Add the oil and salt and continue to blend at maximum speed.
Once you have obtained the desired consistency, add the ricotta and mix it by working it with a spoon.
Your Sicilian pesto is ready to be used.
