Mint Carrot Spaghetti Recipe by of 27-08-2016 [Updated on 27-08-2016]

Carrot spaghetti with mint are a light, healthy and delicious first course, I have prepared them several times for lunch in the office and they were a really nice discovery. After the zucchini spaghetti, in fact, and having the spiralizer always at hand, I couldn't help but try to make carrot spaghetti too. And since I was experimenting, instead of simply seasoning them with oil and salt as I usually did, I wanted to try the combination with mint pesto ... well, now they look like a first course;) Girls yesterday afternoon are preparations for Elisa's birthday cake started, also this year the request was very precise, the theme will be the jungle and the work to be done is quite complicated, let's hope well;) I leave you to the recipe and I'm going to organize my day, one basin: *

How to make mint carrot spaghetti

Wash the carrots well and clean them, then create the spaghetti with the spiralizer (the special device), following the instructions (mine looks like a giant pencil sharpener).

Wash the mint leaves well, dry them and put them in the mixer with almonds, cheese, garlic, salt and oil, and blend.

Season the carrot spaghetti with mint and serve immediately.
