The lemon scallops are a second course of meat simple to make and excellent to serve at dinner with a side of salad. They are a classic of Italian cuisine and usually veal is used to make them, but it is not uncommon to find them also prepared with chicken slices. The recipe that I propose is that of my mother, I love hers escalopes with lemon, their citrusy flavor and aroma make them a truly appetizing dish. Since this is one of the first courses I learned to make, I am very fond of it, Ivano ate scallops for a while, poor thing: P

Method
How to make lemon scallops
Thin the slices of meat with the help of a meat tenderizer
In a non-stick pan, melt a knob of butter in two tablespoons of oil, then place the slices of meat on it
Brown them on both sides over high heat; add salt, pepper and cook for a few minutes.
Lift the scallops and arrange them on a serving plate.
Grate the peel of an untreated lemon and keep the juice aside.
Pour the lemon juice into the cooking juices, add a knob of butter and a teaspoon of flour.
Put the escalopes back into the pan and leave them to flavor in the sauce for a few minutes over high heat.
Serve the lemon escalopes sprinkling them with the lemon sauce and adding a little grated lemon peel.
