Rocket pesto is a sauce with a spicy and sweet flavor at the same time. If you want to make large quantities, you can transfer everything into small single-portion glass jars, freeze and use a jar every now and then if necessary, as well as for the Genoese pesto.
Clean, wash and dry the rocket.
Put the almonds, pecorino, parmesan, garlic and 1/3 of the oil in the blender and blend for 30 sec., Speed. Turbo. Remove from the mug and set aside.
