It is a French recipe, a concentrated broth with an intense flavor made with shellfish heads and shells. How to make shrimp bisque
Divide the cherry tomatoes in half, chop the parsley, cut the carrot into rings and the onion into slices.
Extract the pulp from the prawns, keeping the heads and shells.
Heat some oil in a pan and then add carrot, onion, parsley and cherry tomatoes.
Cook for a few minutes and then add the heads and shells of the prawns.
Deglaze with the Brandy and then add the boiling water and the lid.
Leave to cook for 1 hour, mash everything and strain.
Your prawn bisque is ready.
