The tangerine cake is a very fragrant and soft dessert, perfect for breakfast. A light cake also suitable for lactose intolerant because it is without butter and without milk, in fact I put mandarin juice and seed oil in their place.
I'm not telling you the smell that has spread throughout the kitchen, and, at the first bite, mine Mandarine Cake, confirmed its perfect success;)

How to make tangerine cake
Wash the tangerines and grate the peel. Squeeze the tangerines until you get 100 ml of juice. Peel the remaining fruits and cut them into slices.
In a large bowl, whip the eggs with the sugar until they are puffy and frothy. Then add the oil slowly.
Also add the juice and vanilla while continuing to whip.
In a bowl, mix the flour, baking powder and grated zest
Also add it to the dough, whipping until a smooth and homogeneous dough is obtained.
Put the slices of mandarin on the base of the mold lined with parchment paper. Then pour the mixture into the mold. Bake the tangerine cake in a static oven at 180 degrees for 40 minutes
Once the cake is cooked, let it cool, then turn it upside down on a serving dish
Sprinkle the tangerine cake with icing sugar and serve.
