How to make strawberry pie

Start by preparing the sponge cake
Separate the yolks from the whites and whip them until stiff.
Whip the egg yolks with the boiling water, mix then add the sugar, whisking everything at maximum speed until the mixture is frothy.

Add the flour, baking powder and lemon peel continuing to whip.

Finally add the egg whites beaten until stiff and mix them with a spatula.

Grease and flour an oven mold, then pour the sponge cake mixture into it and bake at 180 ° in the preheated oven. Cook for about 40 minutes.

Once cooked, take out of the oven and let it cool

Meanwhile, prepare what you will need to wet and fill the cake.

Cut the strawberries into small pieces (leave some aside for the decorations), cover with 3 tablespoons of sugar and leave them to macerate. Then we will need the strawberry juice for the sponge cake.

Now prepare the custard
Whip the egg yolks with the sugar, then add the flour and mix until a homogeneous mixture is obtained.

Add the milk slowly and mix to mix everything.

Pour the cream into a saucepan with a lemon zest and put on the heat over low heat and cook, taking care to turn the cream often to avoid lumps.

As soon as the cream begins to thicken, lift the lemon zest and mix the custard vigorously.

Now put the cream in a bowl, cover with plastic wrap and let it cool.
Drain the strawberries with a thin-hole colander and then divide the pulp from the juice.

Put the strawberries and the cold cream in a bowl. Whip 300 grams of cream and add it to the cream, then mix gently so as not to disassemble the mixture.

Cut the sponge cake horizontally into 3 layered discs.

Put the first disc of sponge cake on a serving dish and sprinkle it with the strawberry juice diluted with a little warm water, sugar and a drop of liqueur to taste.

then fill the sponge cake with half of the strawberry cream.

Place a layer of sponge cake, wet and cover with the remaining filling.

Wet the last disc, close the strawberry cake by exerting a slight pressure on the surface to distribute all the filling.

Whip the remaining cream and glaze the entire surface of the cake with it.

Now decorate with sprigs of whipped cream and strawberries, then place the cake in the fridge for a couple of hours before serving.
