Eggplant burgers are a product that I often buy, or rather, I bought. Once I understood the system, in fact, I decided to make these vegetarian burgers at home so as to cut costs and have a food made of top quality ingredients. How to make eggplant burgers
Wash and clean the aubergines, cut them into cubes and brown them in a pan with a little oil.
Then put them in a bowl together with Parmesan, bread sponged with a little water and well squeezed, chopped basil, garlic and salt.
Mix all the ingredients well.
(If the mixture looks really soft, you can add 1-2 tablespoons of breadcrumbs to help compact it a bit, I didn't need it.)
Then divide the mixture into 2 parts and form the 2 burgers.
Press the mixture well, so as to make the burgers compact.
Then cook them in a non-stick pan with a drizzle of oil.
Brown the eggplant burgers on both sides (be careful when turning them, they are a bit delicate).
Then, lift with a spatula and serve immediately.
