The sweet tagliatelle are a typical Emilian dessert prepared during the Carnival period. It is the classic dough of tagliatelle to which a teaspoon of sugar and liqueur is added, the sheets are then stuffed with powdered sugar and spices, cut into slices and fried, a real delight. It was the first time I made these sweet carnival tagliatelle and since I liked them a lot, I will certainly propose them again at my parents' house for Mardi Gras. Method
How to make carnival sweet tagliatelle
Put the flour in a bowl, make a hole in the center, then put the eggs, sugar and rumBeat the eggs with a fork and start incorporating the flour with your fingertips.
Once the mixture is blended, transfer it to a pastry board and work the mixture by pulling the dough, rewinding it on itself and pressing it with your fists until you get a homogeneous mixture.
Wrap the dough in a cloth and let it rest for 30 minutes
Take the dough, roll it out into a sheet with a thickness of about 2 mm
Gradually place the sheets obtained on a floured pastry board
Sprinkle with icing sugar and cover with grated orange peel
Roll up the dough into rolls
Then cut into slices about 1 finger thick
Heat the oil in a pan and fry the rolls obtained
Once golden, lift with a slotted spoon
Then sprinkle the sweet carnival tagliatelle with icing sugar and serve
