There Bari-style focaccia bread it is a preparation with a very soft dough made with flour, semolina, salt, yeast and water, seasoned with oil, tomatoes, olives and traditionally cooked in a wood oven. Of course, the wood oven is missing, but with the Thermomix you can prepare it in a few minutes :)


How to make Focaccia from Bari

Pour the water and yeast into the jug and melt for 15 sec., Speed. 5.
Add the two flours and knead for 1 min., Vel. 6.
Also add 1 tablespoon of oil and work again for 45 sec., Vel. Ear
Then add the salt and work for at least 6 min., Again in Spiga. You will need to obtain a very homogeneous and smooth dough.

Put the dough in a bowl greased with oil, cover with a clean cloth and let it rise for 2 hours.

Transfer the dough to an oiled baking pan and roll it out with your hands.
Season it with the cherry tomatoes cut in half on top of the dough, so as to use all the juice as a condiment, placing them facing downwards.
Also add the olives, oiled again, then add a pinch of salt and a little oregano.

Bake in a preheated convection oven at 200 ° C and cook for about 20 minutes.
Serve the focaccia from Bari hot.
