Wheat:

I beat the egg whites with a pinch of salt and then I added the sugar, gradually, mixing well until I got a strong meringue.

I added water, yolks and flour mixed with baking powder and cocoa, in 3-4 tranches, mixing gently from top to bottom with a spatula.

I lined a tray with baking paper and baked the top in the preheated oven for 30 minutes (toothpick test)

I cut the cooled countertop in half.

Syrup:

I boiled the water with the sugar for about 3-4 minutes then left it to cool and added the rum essence.

Cream:

In a mixing bowl I put whipped cream, milk, powdered sugar and cream powder.

I mixed well for about 2-3 minutes until the cream hardened enough.

Assembly:

On a plate / tray I put the first syrupy top.

I put all the cream and leveled.

With the help of a posh I put Philadelphia cream cheese in place.

I covered it with the other countertop that I syruped beforehand.

I let the cake cool for at least 3-4 hours.

I portioned the cake into suitable pieces then melted the chocolate with whipped cream and glazed each piece with chocolate icing.

I let the cakes cool until the icing hardened, then I stirred a word of Philadelphia cream cheese with milka.

I mixed the milk with the powdered sugar and the powder of the berry cream until it hardened, then I sprinkled a word of purple cream over the cream cheese and chocolate.

I let the cakes cool until ready to serve.

Cake with berry cream

Summer has already come and I still had in the freezer, in very small quantities, some frozen berries from last year. Specifically, some cranberries and some blueberries. So, I thought of making a simple cake to use.

For the countertop
6 eggs
100 gr sugar
150ml oil
300 gr flour
1 teaspoon baking powder
Salt powder

Syrup
50 ml of water mixed with a tablespoon of honey

Cream
200 ml sour cream
200 gr berries (you can use any mixture you have)

Glaze
100 gr chocolate and 50 gr butter

For the countertop
Beat the egg whites with a pinch of salt until they harden.
Separately, beat the yolks with the sugar and then the oil, gradually added. Then add the flour mixed with baking powder.

Bake the cake in a tray of approximately 20X30 or a round shape of approx. 24 cm in diameter.

When the countertop has cooled slightly, cut it in half and syrup it with the water in which you dissolved the honey.

The cream is prepared very simply: beat the whipped cream with the fruit well, until the cream hardens.

Grease the cream on the cake, place it on the top and glaze with melted chocolate with butter. Let cool for at least an hour before cutting the cake.

Cake with chocolate, coffee and berries

I also made this cake due to a challenge on the blog's Facebook group, last week with the theme of berries.
And as I was craving chocolate, this cake came to fruition.

1. In a bowl mix the dry ingredients & # 8211 flour, cocoa, salt, baking powder, baking soda.

2. Mix the coffee with the sour cream.

3. Powder the berries with flour.

4. Rub the sugar well with the butter and add an egg, while beating the dough well.

5. Gradually add the flour mixed with cocoa.

6. At the end, add the cream in which you dissolved the coffee.

7. Then lightly integrate the berries into the dough & don't beat with the mixer!

8. Bake for 30-40 minutes or until you remove a dry toothpick.

Horn compote

This recipe is, as far as I know, original. I mean, I did it last year, for testing, and it was totally special.
From the horns we used to make jam - very good, but very difficult to make, because the fruits are very difficult to pick seeds. Until you get 4 cups of fruit - enough for a portion of jam - it takes a whole day.
Then, I made another kind of pasta - with boiled fruit and then strained and passed through a sieve, to obtain a pasta syrup.

Looking for a simpler recipe, meaning less meticulous, we thought of compote.
I did it last year, I did it again this year. The compote recipe is the same as for apricot compote.
It is a special compote.

Cheesecake with berries and chocolate syrup

1. Grate the biscuits, then put them in a round tart shape and mix with the melted butter. Press on the edges to get the appearance of a crust, then bake the dough for 10-15 minutes, until browned and left to cool.

2. In a bowl, your fan can mix cheese, kept at room temperature, sugar and whipped cream. Then add eggs, one by one. Put the filling in the crust and bake on low-medium heat for 50 minutes.

3. At the end, add fresh berries and let the little one garnish the cake with chocolate syrup. The cake is already ready and you can serve it after it has been in the fridge for at least 3 hours.

The recipe is for 8 servings, 250 calories / serving.
