If you don’t have a Belgian waffle iron, use a regular one, but you probably won’t need as much batter.

Ingredients

  • 1½ cups all-purpose flour
  • ¼ cup (packed) light brown sugar
  • 2 teaspoons baking powder
  • 2 large eggs, room temperature, beaten to blend
  • 2 tablespoons whole-milk ricotta, room temperature
  • 2 tablespoons instant espresso powder, plus more for serving
  • 5 tablespoons unsalted butter, melted, plus more for brushing
  • Pure maple syrup and whipped cream (for serving)

Recipe Preparation

  • Whisk flour, granulated sugar, brown sugar, baking powder, salt, and baking soda in a medium bowl to combine. Whisk eggs and ricotta in a large bowl just to incorporate, then add buttermilk and 2 Tbsp. espresso powder; whisk until smooth. Whisk in 5 Tbsp. melted butter, then fold in dry ingredients with a rubber spatula, being careful not to overmix (some lumps are okay). Let batter sit uncovered at room temperature 30 minutes to allow the flour to hydrate.

  • Preheat oven to 200°. Set a wire rack inside a rimmed baking sheet and place in oven. Heat waffle iron and brush with butter. Pour 1 cup batter onto iron and cook until waffle is golden brown and cooked through, 5–7 minutes. Transfer to wire rack in oven. Repeat with remaining batter, brushing iron with more butter as needed. (Waffles will be limp at first but will crisp up as they sit.)

  • Serve waffles topped with whipped cream, drizzled with maple syrup, and sprinkled with more espresso powder.

It’s rare that I sit down with a magazine these days. With my iPhone always at my side, I find that I turn to it for my entertainment, tips, and recipes most of the time. That said, there is still one magazine that I enjoy reading and as a bonus, it really pays for itself. Until recently All You magazine was only available at Walmart, but it’s recently made it’s way into several other stores. I found it at our local Dollar General which is seriously saying something since I live in small town Alabama. We have one red light which was put up when I was in high school and a Dollar General that was built less than 5 years ago- that’s about it.

I mentioned above that All You magazine pays for itself and I say that for 2 reasons: #1) There are over $30 worth of coupons and deals in the current issue. These are coupons for things we regularly use- body wash, tissue, deli meats, olive oil, etc. All You is a couponer’s dream magazine. #2) Each issue offers articles to help the average person save money. In the current issue, there are 126 ways to stretch every dollar, tips on how to clean your house faster & cheaper, and how to save with free apps.

Another thing I love about All You is the recipe index. Using it, I can see every recipe in the issue at a glance along with the page number. Over on the side, the recipes are ordered by cost per serving. When I saw the reader submitted Coffee Waffles recipe, I knew I had to try it. This recipe can be found on page 62 of the July 2013 issue of All You. It is a budget friendly, reader submitted recipe and the cost per serving is only $.52! These coffee waffles come together quickly, can be served as breakfast or dessert, and can also be frozen and reheated later.


Recipe Summary

  • 1 ¾ cups all-purpose flour
  • ¼ cup sugar
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 ½ cups milk
  • ⅓ cup vegetable oil

Preheat oven to 200°F preheat waffle iron. Stir together flour, sugar, baking soda and salt in a large bowl. In a medium bowl, whisk milk, vegetable oil, egg, vanilla and instant coffee. Add milk mixture to dry ingredients whisk until just combined.

Mist waffle iron lightly with cooking spray. Pour as much batter as manufacturer suggests, usually about 1/2 cup, onto waffle iron, close and cook until golden, about 2 minutes. Place finished waffles directly on rack in oven to keep warm.

Allow waffle iron a minute to heat up, then repeat with remaining batter. Mist iron with cooking spray as needed between batches. Serve with ice cream and caramel sauce, if desired.

Belgian Iced Coffee Cream (Café Liegeois)

Ingredients

  • 8 scoops of Vanilla Ice Cream, softened slightly (not thawed)
  • 2-3 shots of strong and unsweetened Espresso, divided
  • 8 Tablespoons of heavy or double whipping cream
  • 4 Tablespoons of Chocolate sauce (homemade or store-bought)
  • 1 (70 %) dark Chocolate bar (for garnish, optional)

Instructions

  1. Chill 4 small glasses or bowls in the freezer while readying the other ingredients.
  2. Divide the ice cream (2 scoops each) into the 4 glasses or bowls.
  3. Pour over equal amounts of espresso on each bowl (depending on how strong you want it – between 1-2 teaspoons is suggested or to taste.) Follow it with the chocolate sauce and the heavy cream, evenly dividing the cream and chocolate sauce among the bowls.
  4. Mix by hand or use an immersion blender. If it looks quite soft, simply place in the freezer for 10 minutes or so to harden a little or you can enjoy it right away! Garnish with chocolate shavings just before serving, if desired.

Turkish Coffee Ice Cream Recipe

Desserts that have a hint of coffee along with coffee flavored ice cream are high up on my favorites list. A number of people are willing to take a one mile hike in order for them to enjoy the taste of an excellent hot cup of coffee packed with full-bodied essences and flavors. Another way of enjoying the flavor that comes from coffee with milk or café au lait is by having a bowl of coffee-flavored ice cream. And similar to a great cup of coffee, it would appear very stylish and gratifying.

This ice cream recipe was assembled based on what my senses remembered about the taste of a tremendously delectable Turkish coffee anglaise which was created by a former colleague of mine who was a chef. Even as it was a single ingredient in a complicated after-dinner treat which also had a number of different flavors and elements, the idea of the sauce stuck to my mind for a long time. After a long while, I recognized the need for me to create this ice cream in order for me to get over it and it worked. A delectable full-bodied coffee with a hint of cardamom, which comes out near the end, provided the luscious flavor of the treat.

This is an uncomplicated recipe using high-quality coffee immersed in cream and milk together with citrus peel and pods of cardamom. After it is made into custard, it is given more energy by adding an extra portion of espresso. People who have a fondness for coffee-flavored ice cream and want it to have an extra zest will definitely enjoy this.

More often than not, we take pleasure in having some coffee and tea with close friends and family. This is one coffee recipe that I will include in my directory of quiches and treats.

– The cardamom were not as fresh as they should be, therefore I utilized fifteen cardamom pods. You can begin with ten cardamom pods if you are apprehensive about it and take a sample following soaking to check if you need to put in more. Even if it may appear many, keep in mind that the aroma of coffee is reasonably intense.

– Boiling the custard should not be an option which will make stirring essential to allow the custard to continue move and avoid any rapid heating which will change it into scrambled eggs. I normally utilize a wooden spoon that is formed like a spatula whenever I prepare the base of ice cream. This is an ideal utensil for continually grazing the base of the saucepan.

– An essential ingredient to the combination is salt. This allows the taste to stand out. Sprinkle small amounts until you find the right combination. Once it occurs, you will simply know it.

– I try to fight back the urge to add other components on the ice cream thinking it may remove some of the understated flavors that are rather refined.

Even if fresh ice cream can be stored for a long time, it will turn exceptionally solid since it does not have any synthetic emulsifiers or stabilizers. Allow the ice cream that you made at home to stay in room temperature for a while in order for you to get pleasure from its robust taste and consistency

Ingredients for the Turkish Coffee Ice Cream Recipe

One and one-half cup of heavy cream
One and one-half cup of whole milk
Three-fourths cup of sugar
One cup of whole coffee beans
Ten to fifteen lightly crushed cardamom pods
Citrus peel from one large or two small oranges
Four egg yolks
One teaspoon of instant espresso powder
A dash of salt

Mix together the milk, sugar, cream, Turkish Coffee Beans, cardamom pods, and citrus peel inside a pan and allow it to simmer gradually using a low temperature setting up to a point where the sugar has melted. Prevent it from boiling. Take it out of the source of heat, then cover it while allowing it to saturate for sixty minutes. Check the flavor of the blend after thirty minutes to be certain that the appropriate level of cardamom was used. If you choose to do so, you can add more and slowly heat it up again for around a minute or two before being taken out of the heat source and allowed to saturate again.

Once it has saturated to the preferred intensity, filter the mixture into a spotless pan and lightly warm it up.

Whip up the egg yolks inside a medium-size container. Gradually put in the warm mixture while frequently whipping it to prevent the eggs from becoming scrambled. Put the mixture back into the pan and heat it using a medium setting. Heat it while mixing and regularly scouring the base of the pan up to a point where the custard starts to condense and cover the back part of the wooden spoon, Transfer the custard into a fresh bowl using a strainer, making sure to apply pressure in the beans to extract the liquid.

Put the instant espresso powder inside a small container and mix it with the cream to liquefy it. Mix the espresso and whip it up completely. Place a dash of salt for the taste. Allow the ice cream base to be frozen overnight.

Use the ice cream maker to freeze it following the directions. Transfer it into a sealed spotless container then place a bit of plastic wrap on the exterior, cover up and store inside the freezer.
