So in my case. I am from Transylvania, as some of you know well, so I remember with pleasure the chicken paprika made by my mother. And even if I wasn't a big fan of polenta in my childhood, paprika didn't go with anything but polenta and we ate it with pleasure. I do it now for my family, less often, but it's as if what my mother did is better. And that's why when she comes to visit Bucharest, I make her prepare paprika for us. I hope you try it too and like it, even if I tried to give you an adaptation, so that it is a dukan recipe suitable for the diet (but you also have the original version).

Ingredient:

-3-4-5 pieces of chicken (thighs, hammers, breast)

- 1-2 lgt paprika, himlaya salt, pepper

Preparation.

Finely chop the onion and fry in olive oil for about 3 minutes. Then add the paprika and let it harden for another 2 minutes. Put the chicken pieces and let them simmer under the lid for a few minutes (approx. 6-8 min.).

Then pour a cup of water over the chicken and leave it to boil under the lid (some of the water will evaporate).

Meanwhile, mix the milk with the cornstarch and then add it to the pot over the boiled chicken. Let it simmer and stir constantly until it thickens (about 10 minutes), but the sauce should not be very thick. At the last boil, add salt, pepper and quark (or sour cream), let it boil twice more and turn off the heat. It is eaten hot with chopped green parsley on top and polenta (dukan or normal).

Leave on the fire for 25 minutes or until the meat penetrates. Mix the cream with 1 tablespoon of flour in a bowl. Add about 1 cup of the juice from the food over the cream. Carefully pour into the saucepan and simmer for another 10 minutes.

Serve with noodles, or you can make dumplings. Garnish with parsley and serve hot food.

  1. The first secret of this personal version of paprika is chicken soup. Make a chicken soup (or use a ready-made one) to boil, along with the chicken and vegetables, add a lightly fried onion on the stove or in a fat-free Teflon pan.   2. The second secret is to extract chicken fat from the skin to add flavor. Remove the skin from the thighs and cut it into squares. Brown the chicken skin in a tablespoon of sunflower oil.   5. Turn off everything with the chilled chicken soup.
  6. Cover the pan and simmer for 30 minutes until the meat is cooked through and the juice has turned into a creamy red sauce. Add salt and pepper.
  7. The last secret to obtaining a fine cream is to strain the paprika to remove any lumps.

Serve the hot paprika as follows: place one chicken leg in each plate, pour the sauce over it and add a teaspoon of cream. Optionally add a teaspoon of hot pepper paste. The chicken paprika is eaten with either bread or semolina dumplings added at the end so as not to "dirty" them.

Simmer for 2 minutes to remove everything from the heat, put the 200 grams of cream over the composition on the fire and mix slowly. Again, it is important that the fire does not have an increased intensity, otherwise there is a chance that the whole preparation will coagulate.

After about 5 minutes from the moment you added the cream, you can take everything off the heat and add the parsley.
