Helping others is good for the soul―and your health. Here are five ways to reach out during the holidays and beyond.

1. Start simple. Offer to take your grandfather's car in for servicing. Help an office colleague wrap Christmas presents. Invite somebody over for dinner. Make a call to a long-lost family member or friend.

2. Extend your world. Talk to the folks who live on your block. In one Ann Arbor, Michigan, neighborhood, a resident took the initiative and created a computer directory, with photos and e-mail addresses, for 50 neighborhood families. You can also set up newsletters and regular block get-togethers.

3. Combine personal and community interests. A singles club in Washington, D.C., plans all its events around volunteer activities. Hundreds may show up to lend a hand on a community project and meet new people. (For more local examples, check out the stories at www.bettertogether.org).

4. Go online. Match your interests and schedules with the needs of community groups in your area. VolunteerMatch (www.volunteermatch.org) will ask for your ZIP code so it can hook you up with one of the 45,000 nonprofit organizations it represents nationwide. The Points of Light Foundation (www.pointsoflight.org) maintains a similar national network.

5. Keep it going past the holidays. "Every year, organizations that serve food to the poor are overwhelmed by people who want to work on Thanksgiving or Christmas," says Beth Davis, who left an advertising career to work full-time with Denver's Metro Volunteers. To compensate for the seasonal bunching-up, Davis helps match volunteers with times and organizations that can use the help year-round. "These organizations only have so many slots they can fill during the holidays. But when they ask if people can come back to help in January, they don't get the response they need." If you're connected in March, June, and August, then chances are when Christmastime rolls around, you'll have plenty of new friends to celebrate with.

How to Give Back on Giving Tuesday and During the Holidays

This time of year, there’s a lot of spending going on—it seems as soon as the Halloween costumes are barely put away athat the frenzy of holiday consumerism is upon us. Of course, there’s Black Friday, when megastores and malls around the country break out their craziest deals and shoppers line up for hours in the cold night to take advantage of sunrise deals.

Over the past decade or so, other shopping occasions have been tacked onto the post-Thanksgiving weekend: Small Business Saturday, Cyber Monday and, more recently, Giving Tuesday. While we’re not opposed to bargain hunting or great online savings, Giving Tuesday is the day that’s most important to us.

Giving Tuesday launched in 2012 as an initiative begun by the 92nd Street Y in New York City and the United Nations Foundation. The day, focused on charitable giving, is positioned as a response to the nonstop commercialization at the start of the holiday shopping season.

Although we understand that people have been asked to dig deep into their pockets throughout the year to help with natural disaster relief efforts, wildfires and the growing list of local and global causes that matter to them, we want to remind you to give locally as well. Just as you try to boost the local economy by shopping at the farmers market and supporting independent retailers, please remember your neighbors in need right here in Chester County with a Giving Tuesday donation to Chester County Food Bank on Tuesday, December 3.

At the CCFB, we can turn every dollar given into four dollars’ worth of healthy food. By leveraging our buying power, working with markets and local organizations to rescue food and communicating with our network of farm partners to glean excess crops, we are able to really stretch out our supporters’ generous monetary donations. We use these donations—and the food we can buy with them—to further our many initiatives and programs that combat food insecurity in our communities.

Every year, we notice a cultural switch around charitable giving. Thanksgiving is all about food, but as we turn the corner toward Christmas, Hanukkah and Kwanzaa, many people begin to donate toys (to other organizations). Gifts for children are important, but hunger never takes a break, especially in the winter, when colder weather often drives up families’ expenses with higher heating bills. As we so often say, hunger lives closer than you think. Though Chester County is home to many middle- and upper middle-class families, many of our neighbors are working families just barely scraping by. In fact, 27 percent of households in Chester County struggle to make ends meet, and the added financial pressures around the holiday can exacerbate the problem.

Anne Shuniak, CCFB’s marketing and communications manager, reminds us that it’s not just the holidays we’re preparing for. “We’re stocking our shelves for winter days ahead too,” she said. “We’re trying to bring in as much as we can during this time, because it’s always the trend that things slow down in the New Year after the holiday season has passed.”

So as you gear up for holiday giving, consider a monetary donation—our online giving platform includes an easy way to make a tribute gift in a loved one’s honor or memory, and we’ll even send someone a card via email letting them know of your generous gift. What a cool idea for a unique hostess gift, or for a meaningful gesture instead of a physical gift! If you’d like to make a food donation, we’re currently most in need of pantry staples like pasta, rice, hearty soups, and canned chicken and tuna. We do accept holiday-specific items, like turkeys, hams and instant potatoes, but its the pantry staples that really help local families put together those day-to-day meals that are just as important (nutritionally) as big holiday feasts. Food donations can be dropped off at our facility in Exton Monday through Friday from 8 a.m.–5 p.m. Please bring food donations to our warehouse loading dock entrance, where you can pull directly in and will be assisted unloading your vehicle. Note that we will be close at noon on December 23rd and remain closed through January 1, 2020. We will return to the office at 8 a.m. on Thursday, January 2, 2020.

Friendsgiving Casserole Recipe

Friendsgiving Casserole is one of my kid’s favorite dishes and a go-to of mine when I want to take dinner to a new mother or a family who could use a hot meal—mostly because it’s easy to love, even for the pickiest eaters. The chicken is mild in flavor, yet completely satisfying. A lot of the traditional recipes will serve the chicken on a bed of rice or with a ritz or stuffing-like topping. I prefer to crumble a loaf of French bread and bake it right on top, because it never fails to meld oh-so-perfectly with the creamy sauce—which makes it that much easier for a bread-dipping connoisseur like me to get a taste of the good stuff! I like to serve this dish over mashed potatoes and with a side of Holiday Cranberry Sauce.

Friendsgiving Casserole

From Magnolia Table, Volume 2

Prep: 1 hour 10 minutes
Cook: 45 minutes
Cool: none

Ingredients

1 baguette torn into 1-inch pieces (about 6 cups)
7 tablespoons unsalted butter
1/2 cup minced yellow onion
1/2 cup minced celery
1 garlic clove, minced
2 tablespoons all-purpose flour
1 teaspoon garlic salt
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1½ cups heavy (whipping) cream
5 cups shredded cooked chicken breast (home-roasted or rotisserie chicken)
1 cup sour cream
2 cups chicken broth
Freshly cracked black pepper, for serving
3 green onions, minced (optional)
Chopped fresh parsley (optional)
Holiday Cranberry Sauce (recipe follows), for serving

Instructions

1. Lay the torn bread on a sheet pan and place it in a warm oven until dried out, 1 hour on low heat.

2. Preheat the oven to 325°F.

3. In a medium saucepan, melt 3 tablespoons of the butter over medium heat. Add the onion and celery and sauté until tender and translucent, 6 to 8 minutes.

4. Add the garlic and flour and cook, whisking constantly, until fragrant but not burned, about 1 minute. Add the garlic salt, salt, and pepper and slowly pour in the cream. Cook, whisking often, until just at a simmer, about 5 minutes.

5. Spread the chicken in a 9 × 13-inch baking dish and spread the sour cream on top. Pour the cream sauce evenly on top and sprinkle on the bread cubes. Melt the remaining 4 tablespoons butter, mix it with the chicken broth, and pour it over the casserole, coating the bread well.

6. Bake, uncovered, until bubbling, about 30 minutes. Broil the last 3 or 4 minutes for a good toasty top. Top with freshly cracked pepper and a sprinkle of minced green onions and parsley, if desired.

7. Scoop out the casserole to serve with mashed potatoes, green beans, and cranberry sauce on the side.

8. Store in an airtight container in the refrigerator for 3 to 5 days.

Holiday Cranberry Sauce

From Magnolia Table Volume 2

Prep: 5 minutes
Cook: 10 minutes
Cool: 2 hours 30 minutes

Ingredients

3 cups fresh cranberries
1 cup fresh orange juice
1/2 cup sugar
1 cinnamon stick
1 tablespoon grated orange zest

Instructions

1. In a medium saucepan, combine the cranberries, orange juice, sugar, cinnamon stick, and orange zest. Bring to a boil over medium heat, cover, reduce the heat to low, and cook until thickened and bubbly, about 10 minutes.

2. Let cool, then refrigerate. Serve chilled. 3. Store in an airtight container in the refrigerator for 4 to 5 days.

To test boiled potatoes for doneness, use a skewer or the tines of a fork rather than the tip of a knife so you know they’re truly tender (a knife slides through the flesh way too easily). To test boiled eggs for doneness—wait, you can’t! Just make sure the eggs are room temperature when you drop them in the water (otherwise they’re prone to cracking), set a timer right away, and have an ice bath at the ready.

1. Chocolate Fudge Melt 1/2 stick butter, 4 cups marshmallows, 1 cup cream, 2 cups sugar and a pinch of salt in a saucepan. Simmer, stirring, 5 minutes. Off the heat, stir in 3 cups chocolate chips until smooth. Spread in a foil-lined 9-by-13-inch pan. Let cool and cut into squares.

Add the peel and cook until the liquid is absorbed, 10 minutes. Transfer to a rack to dry, 8 hours. Toss in sugar.

12. Chocolate Orange Peels Peel 3 oranges. Cut the rind into strips and boil in water 15 minutes, then drain and rinse. Simmer 3 cups each sugar and water. Add the peel and cook until soft, 45 minutes. Drain and toss in sugar. Transfer to a rack to dry, 8 hours. Dip in melted bittersweet chocolate let harden.

13. Crystallized Ginger Cover 1 pound sliced peeled ginger with water and simmer until tender, 45 minutes. Reserve 1/4 cup cooking liquid, then drain. Simmer the reserved cooking liquid, the ginger and 1 1/2 cups sugar, stirring, until the liquid is absorbed, 15 to 20 minutes. Toss the ginger in the sugar left in the pan. Transfer to a rack to cool.

In a stand mixer fitted with the paddle attachment, beat 2 egg whites on high speed until stiff peaks form. With the motor running, drizzle in the hot honey mixture and beat until thick, 8 minutes. On low speed, add 1/4 cup confectioners’ sugar, 1/2 teaspoon vanilla and 2 1/2 cups almonds. Transfer to an oiled, parchment paper-lined baking sheet flatten to 1 inch thick with a rolling pin. Cool 2 hours, then cut into squares.

40. Cheesecake Bites Line 36 mini-muffin cups with paper liners. Mix 3/4 cup finely crushed graham crackers, 1 tablespoon sugar and 2 tablespoons melted butter press into the liners and chill until firm. Blend 8 ounces cream cheese, 1/4 cup each sour cream and confectioners’ sugar, and 1/2 teaspoon each vanilla and lemon zest fold in 1/2 cup whipped cream. Pipe or spoon into the crusts chill 1 hour. Combine 1 stick softened butter, 1/2 cup sugar, 2 eggs and 1/3 cup each almond paste and cake flour in a food processor blend until smooth. Divide among the liners, filling one-third of the way. Press a dried fig or prune into each one and sprinkle with sliced almonds and coarse sugar. Bake at 350 degrees F until golden, 12 to 15 minutes.

42. Vanilla Apricots Bring 3 cups sugar, 1 1/2 cups water, 3 strips lemon zest and 1 split vanilla bean to a simmer, stirring. Add 3 cups dried apricots cook 10 minutes. Let cool, then divide among jars.

Melt 8 ounces chopped semisweet chocolate with 2 teaspoons shortening in the microwave let cool to room temperature. Dip the stars in the melted chocolate and sprinkle with nonpareils, if desired. 45. Frosted Candy Canes Melt 1 cup white chocolate chips with 4 teaspoons shortening in the microwave. Dip candy canes in the melted white chocolate, let cool slightly on oiled parchment paper, then roll in colored nonpareils or sprinkles. Let harden.


Dried Fruit

Homemade Christmas trail mix is the perfect stocking stuffer, teacher gift, mailman gift, or family gift. Trail mix recipes vary in specific ingredients, but generally they contain cereal, nuts, chocolate chips, dried fruit, and at times, small candies like M&M's or Heath Bits.

It's easy to make up large batches of trail mix at one time, which means you can make plenty for everyone on your list in one day. It's much easier than baking and is a nice switch from the traditional cookies and fruitcake.

Package your homemade trail mix in tins, cellophane bags, or small paint cans for an interesting and fun presentation. Add a small card with all of the ingredients listed, just in case you're not sure about potential allergies.

Homemade Christmas Trail Mix Recipes

Christmas Tree Trail Mix

Preheat the oven to 300 degrees Fahrenheit and grease a jellyroll pan or cookie sheet with sides. Also, grease the sides of a large bowl. Set aside.

1 cup dried cranberries

Pop the popcorn according to the directions. Mix the toasted walnuts and popcorn together in the prepared bowl.

In a saucepan, combine the syrup, cinnamon, and salt. Set to medium heat and allow the mixture to come to a boil and let it cook for about 4 minutes, stirring occasionally. Remove the pan from the heat. Add the baking soda and blend well (the mixture should have a creamy consistency).

Let the mixture cool slightly and then pour it all over the popcorn and nuts. Make sure the popcorn and nuts are thoroughly covered.

Turn everything out onto the prepared cookie sheet and distribute evenly. Bake for 15 minutes at 300 degrees Fahrenheit or until the mix is 'dry'. Cool for 20 minutes. Add the cranberries last.

Christmas Party Trail Mix

Yogurt covered raisins or pretzels

Peanuts, walnuts, or your favorite nut

Dried oranges, cranberries, or apricots

Toss all of the ingredients into a large bowl and mix. Take the entire bowl to the office Christmas party or divide it up into smaller containers to give as gifts to family and friends. Easy and delicious!

Holiday Snack Mix

M&M's, Heath Bits, or your choice of small candy

Dried fruit - apples, bananas, apricots, cranberries, etc.

Chocolate chips, butterscotch chips, or white chips

Toss the ingredients together and then divide into mason jars, tins, coffee can, or any other interesting container idea that comes to you.
