First prepare the dough as follows: rub the butter with the sugar and a pinch of salt, add the egg and orange peel and the baking soda quenched in the orange juice. Then gradually add the flour, stirring until you incorporate about half the amount, then pour the composition on the work table lined with plenty of flour and knead by hand until you incorporate the rest of the flour.
Wrap the dough in cling film and refrigerate for an hour.
During this time we prepare the filling. We wash the apples and peel them and then put them on the large grater.
Squeeze the orange juice over the apples, add the sugar and put on the fire to harden for about 10-15 minutes. Remove from the heat and leave to cool.
Remove the dough from the refrigerator and divide it into two parts, one slightly larger than the other.
Spread the larger piece on the table lined with flour in a rectangular shape and place it in a tray 022/30 cm) lined with baking paper.
Pour the hardened apples over the dough and level. Sprinkle vanilla sugar and cinnamon on top.
We spread the remaining dough and cut from it strips that we put in the form of a grid over the filling.
Put the tray in the preheated oven at 175 degrees for 25-30 minutes, until the pie is browned on top.
Remove from the oven and after it has cooled a little, remove the pie from the pan and dust it with powdered sugar.
