You are probably telling yourself now that it is quite difficult to make these sheets, but the truth is that the dough stretches easily, it is child's play. The most delicate part is the folding, because you have to be careful not to crumble the sheets.
This kind of pie, which seems to be of Turkish origin, is found in many other cuisines (Greece, Serbia, Arab countries, etc.), even in Romania (Dobrogea pie).

Instead, I never tried the spinach pie made with frozen sheets :) One thing is clear: the pie turns out differently, but the above version (the dough one) requires a lot more work.
Tart recipe with spinach and cheese
Gradually incorporate the cold butter into the flour, thyme and salt mixture. At the end, add the egg and knead until you get a soft ball of dough. The dough can be spread directly on the tray, or it can be wrapped in plastic wrap and refrigerated for at least 40 minutes.
Wash the spinach very well, cut the tails and scald for a few seconds in a pot of boiling water and salt. (Tip: You can put hot tap water directly in the pot to reduce the cooking time). Remove the spinach from the pot and allow to cool. When it has cooled, it is squeezed very well and finely chopped.
Grate the cheese / cheeses in a large bowl, then finely chop the green onions. Heat the olive oil in a Teflon pan. When the oil has warmed up, add the butter cubes, then lightly brown the green onions. After a few minutes, put the spinach in the pan, mix well and turn off the heat.
Put the mixture in the pan over the grated cheese and break the two eggs on top. Mix the composition well.
Remove the shell from the refrigerator and spread it in a thin layer. Put the crust in the tart pan, make a few holes with a fork and cover with baking paper over which sprinkle rice, pasta or dried beans. Bake at 160 degrees for up to 15 minutes. Allow the dough to cool, then pour the composition into the pan. Put the tray back in the oven at 180 degrees for 40 minutes.
Remove the tart from the oven and allow to cool. It can be served plain or with a little chicken or turkey.

This recipe is one that I am sure you will enjoy.
Cruise Phase (PL, PP), Consolidation, Definitive Stabilization
Nutritional scale - starting with Wednesday
- 200-250 g of quark or cream cheese
- 60 g wheat gluten (or wholemeal flour)
- 30 g cornstarch (or wholemeal flour)
- 4 lg finely ground oat bran
- 1 vial of vanilla essence
- 3 tablespoons sweetener powder
-1 vial of vanilla essence
+ 1 egg yolk and 2 lg milk for greasing
Put the dry ingredients in a bowl, and then add with a spoon the quark or cream cheese (one spoon at a time) stirring until a thick crust is formed. Wrap this shell in cling film and refrigerate for 15 minutes.
After it has been refrigerated, take the crust and spread it on a plate on which you have sprinkled a little wheat gluten before (so that it does not stick).
Meanwhile, you can prepare the filling in a bowl, mixing all the ingredients.
Spread as much pizza as you can in a round shape and cut into 9 or 12 triangles. Place the filling with the teaspoon at the base of each triangle and start rolling (start with the larger side and end with the tip).
Place in the tray on baking paper and grease with the yolk mixed with milk. Put the tray in the oven heated to 180 degrees and bake until golden brown (15-20 minutes).
After removing them on the plate, powder them with xylitol (sweetener) and serve them with pleasure.

Spinach and cheese tart is among my favorite tarts! I transformed an old recipe, giving it a new shape. It is a tart-shaped pie, with layers in which the cheese and spinach are highlighted separately.
I think it is one of the simplest recipes for spinach and cheese pies, with a beautiful presentation and an extraordinarily good taste.
I used frozen spinach, because it is found throughout the year.
I used cow's milk, but you can change it with any other food or even with feta / goat cheese, depending on your tastes and what you have in the house.
Here is the list of ingredients and how to prepare the tart with spinach and cheese.
400 g frozen spinach
1 tablespoon butter
3 pie sheets
oil for spreading sheets
200 g telemea
100 g mozzarella
2 teaspoons starch
2 tablespoons sour cream
Add the spinach, heat it over medium to low heat, until the water evaporates. Remove from the heat at this point and put over the spinach a little more than half the amount of grated cheese and mixed with 3 eggs, starch, salt and pepper.
We put the oiled pie sheets in a tray with a diameter of 22 cm. We cut the edges that exceed the height of the tray with scissors, then we put them aside, because we will use them as well. Pour the spinach mixture with the cheese in the tray and cover it with the rest of the cheese.
We arrange the remaining pieces of pie sheets in waves, fringed over the cheeses (depending on everyone's imagination), then we cover them with 1 beaten egg with 2 tablespoons of sour cream and a pinch of salt. Bake the tart in the preheated oven at 180 ° C for 40-45 minutes.
It is so good that I couldn't resist waiting for it to cool down! You have to convince yourself.
Method of preparation
Cut the onion with the small garlic and cook for 2-3 minutes in a pot in which I put a tablespoon of butter. Meanwhile, chop the freshly boiled spinach a little and add it over the seasoned onion and let the flavors penetrate for a maximum of 5 minutes. I added a little more salt (make sure the cheese is quite salty, don't add too much salt) and pepper. Allow to cool slightly. Then add the grated Telemea cheese and gorgonzola. Mix well. I got the filling for 12 cannelloni (I threw a little spinach when I washed it). Fill each pasta with the spinach mixture with the cheese. Prepare a yena dish and grease with butter on the edges, in which the stuffed pasta is added. We start with the sauce. Put a tablespoon of butter in a pot until it melts, then put a tablespoon of flour and mix quickly so as not to become lumpy. Add the milk a little and mix until it thickens. Then add the cream for cooking and the gorgozola at the end. Mix well so that it doesn't stick and at the end add 3-4 strands of finely chopped fresh parsley. Put the sauce over the pasta, cover them and put an aluminum foil on top. Put them in the preheated oven at 180 degrees for 30 minutes. After 30 minutes, take out the dish and put a layer of grated cheese and leave the dish in the oven for another 10 minutes without the aluminum foil to brown a little.
