This is simple salad from Sophie Michell shows off the best of ClemenGold. The caramel sets to give crunch and texture and the pistachios and mint set off the deep orange colours.

- 150g caster sugar
- 25ml water
- 100g pistachio slivers
- 8 ClemenGolds
- 1 handful fresh mint leaves
MethodPrep:10min ›Cook:15min ›Ready in:25min
- Peel the ClemenGolds carefully, removing as much pith as possible. Then slice the fruit whole into .5cm slices and arrange prettily onto a platter.
- Add the sugar and water to a small saucepan (try not to have any sugar crystals on the sides of the saucepan, as it will crystallise) and then place on a high heat. Bring to the boil, and keep on a rolling simmer until it turns a medium golden brown. Do not stir the pan, just swill it around now and again to spread the colour.
- When it has reached its golden hues, take off the heat and cool for 3 minutes. Please note that when it starts changing colour it will go really quickly, so watch it. It will also be incredibly hot, so be careful!
- When it has cooled off a little, drizzle it over the ClemenGolds and let it set, then sprinkle with mint and pistachios and serve.

Caramel and Pistachio Citrus Fruit Salad recipe - Recipes
1 cup pistachio cream (I used Nonna Vincenza's, but you can't find it in the U.S., so substitute another brand that you might find here or here.)
Split the vanilla bean in half and add to the milk. Simmer just below the boiling point, then set it aside to infuse for about 15 minutes. Remove the bean. A little "skin" may have formed while it was cooling, so just lift it off and discard. Beat the egg yolks until creamy, then pour a couple of tablespoons of the hot milk into the eggs to slowly raise the temperature so that you don't end up with scrambled eggs. Keep adding the milk a little at a time, then stir in the sugar and place the mixture in a double boiler. Cook over a very low heat, stirring all the while, until the mixture heavily coats the back of a wooden spoon. Be careful not to cook it too long or to let it boil, or you'll end up a with curdled mess.
Remove the mixture from the heat, place the mixture into the refrigerator to cool for a few hours (or overnight), stir in the cream, the vodka and process in an ice cream maker. While it's churning, add the pistachio cream. Place it in the freezer to harden a bit more.

June Recipe: Citrus Salad with Rosewater Caramel
I saw this recipe in Red Magazine and was instantly drawn to it. It looked beautifully summery and it had all the things I love in it so I had to give it a go. A bit of a change from all the baking I have been doing and makes a wonderful summer pudding on a beautiful sunny day!
Ingredients
2 blood oranges
2 oranges
1 red or pink grapefruit, optional
2 kiwi fruit – gold if you can find these
12 small fresh mint leaves
40g pistachio nuts, lightly crushed
1 tbsp dried edible rose petals, lightly crushed
40g dark chocolate, chilled
Thick Greek yogurt, to serve
For the rosewater caramel syrup
150ml warm water
200g caster sugar
1 cinnamon stick
30g butter
1 tbsp rosewater
Instructions
* Top and tail all the fruit, then hold each piece, one of the cut sides down, on a flat surface and use a sharp knife to slice away all the peel and pith (or kiwi skin) to reveal the flesh. Turn each piece on its side and cut the fruit into thin (just under 5mm) slices.
* Arrange the slices on a large flat platter.
* To make the rosewater syrup, put half the warm water in a small saucepan with the sugar and cinnamon stick and set over a very low heat. Stir gently until the sugar has dissolved, then turn up the heat and stop stirring. Swirl the pan as it turns a blonde colour and starts to caramelise (this will take about 5 mins).
* Take the pan off the heat and beat in the butter, rapidly followed by the remaining water. Keep beating until both are fully incorporated, then add a small pinch of salt and return the pan to a very low heat. Bring to a simmer for 2 mins, remove from the heat and once it’s stopped bubbling, stir in the rosewater.
* Pour the warm syrup over the prepared fruit platter, scatter over the mint leaves, pistachios and rose petals and use a vegetable peeler to shave a little chocolate over the top.
* Serve with Greek yogurt on the side (or add a few dollops to the platter before garnishing)

In a saucepan over medium heat cook sugar and milk stirring well to dissolve sugar. Turn heat to low and cook about 12 -15 minutes till it turns an amber liquid and mixture coats the spoon. |
Add coconut cream, coconut oil and salt and take off the fire. |
Roughly chop pistachio and spread on a plate |
Dip strawberries in salted caramel sauce and then in chopped nuts and set on a plate |
Refrigerate 1/2 hour and enjoy chilled salted strawberries ! |

Cherry Salad Ingredients
The star ingredient is, of course, the cherries. I use a can of cherry pie filling versus fresh cherries here.
Supporting ingredients include walnuts (love their crunch!), pineapple chunks, mini marshmallows and Cool Whip. It also uses a can of sweetened condensed milk.
If you aren’t a big fan of either the pineapple or walnuts, leave them out. You could also substitute other nuts or fruit in their place if you like.
