For the countertop:

When it is ready, let it cool completely, then cut it in 2 horizontally.

For the syrup: Heat the water with the sugar and vanilla essence until it boils, then leave it to cool.

The quantities are according to preferences, how syrupy or not, let the countertop be !!!

For the milk chocolate mousse:

We put the gelatin sheets to hydrate in cold water.

Melt the chocolate together with the milk, add the gelatin sheets and let it reach room temperature.

Mix the whipped cream with the powdered sugar until it becomes firm, then mix it with the chocolate and mix well.

For vanilla cream:

In a large kettle, put the milk on the fire together with the bag of pudding, the sugar and a little vanilla essence. Stir continuously until it begins to thicken. Turn off the heat and let it cool completely, stirring occasionally so as not to form a crust on top.

Mix the whipped cream with the powdered sugar until it becomes firm, then mix it with the cooled vanilla pudding, and finally we get a fluffy and easy to spread vanilla cream.

Assembly:

In the tray in which I baked the top, I placed the same baking paper but turned upside down (economy :))) because I do not have the tray with detachable walls in a rectangular shape and so we invent something else: D.

Put the first sheet on the counter, syrup well, place the chocolate mousse and let it cool until the cream hardens. (As a note: Now is the time to deal with vanilla cream) !!!

After the cream has hardened, place the other sheet on the counter, and now ... ATTENTION ... place a shredder on the counter, turn the cake upside down, remove the tray and baking paper, replace with a plate and turn the cake over again. up, but it matters that I took it out of the tray;).

This operation must be very fast so as not to leave too much weight on the mousse;)

We also syrup the second sheet, then we spread the vanilla cream, we level it nicely, and at the end we decorate it with the chocolate given on the grater.
