Heat a little oil in the pan and fry the eggplant slices on both sides (I'm not exaggerating with the frying or oil). I take out the eggplant slices on absorbent towels, which will "pull" the oil.

I spread a sheet of dough, by hand, (in a somewhat round shape), in a pan greased with oil. Grease the dough with the prepared tomato sauce, then place the eggplant slices, over them I put tomato slices.

Grate some cheese on top and put the tray in the preheated oven at 200 degrees.

Honestly, I didn't look at my watch, but it didn't take long to bake the pizza, about 30 minutes. Near the end I put some basil leaves on top.


Make mayonnaise from yeast, sugar, 1 pinch of salt, a little flour and lukewarm milk. You let him grow up.

Preparation

Put the yeast in a little warm water, or follow the instructions written on the package.

Put the flour in a deep bowl, add the yeast and warm water, oil and salt. Knead well, by hand, until the dough is smooth.

Cover the bowl with a clean kitchen towel and leave to rise for at least 2 hours in a warm place.

Cut the eggplant into pieces, salt it, put it in a sieve, and let it drain for 1 hour.

Finely chop the onion and garlic and fry in oil. When the onion has become translucent, add the eggplant pieces well drained of water, chopped tomatoes, salt, pepper, mix well, leave for 15 minutes over low heat.

Spread the dough on the work table, sprinkled with flour so that it does not stick, add the eggplant sauce. Grease the pan with oil and bake at 235 ° C for 20 minutes.


  • 2 large eggplants (800 g)
  • 150 g mozzarella
  • 70 g chorizo
  • 200 g concentrated tomato juice (mashed potatoes)

Mini-pizza with eggplant top

I've been waiting for this recipe for a few weeks to see the light of day, and I've been postponing it for various reasons. Shame on me! I know it's eggplant time in Romania, so you'll surely be glad to know that you can do something else with them besides eggplant salad or zacusca.

Very small pizza, the size of a slice of eggplant & # 8211 that's what you can do. It is very simple & # 8211 you take the eggplants, two large ones, say, cut them into rounds of about 1cm and a half, give them salt and let them breathe. Then roll them in breadcrumbs, fry them for 2 minutes on each side. Thus formed the top, garnish it with cheese and tomato sauce and bake.

What I like about this recipe is that it's a way to cook eggplants without soaking them in oil. I know that in the description above the word fried appears, which implies oil, but I want to mention that it must be used very little.
