  • 350 gr spaghetti
  • 25 gr butter
  • 1 tablespoon olive oil
  • a finely chopped onion
  • 225 gr slices of smoked ham cut into pieces
  • 3 eggs, beaten
  • 6 tablespoons sour cream for whipping
  • 55 gr Brinza finely grated ricotta
  • 85 gr parmesan race
  • 2 tablespoons freshly chopped parsley

Servings: 5

Preparation time: less than 30 minutes

RECIPE PREPARATION Carbonara sauce:


  1. Boil the spaghetti in a large saucepan with boiling water and a little salt for 10-12 minutes

  2. Meanwhile, heat the butter and oil in a pan until the butter melts. Add the onion and cook for 5 minutes, until soft.

  3. Add the ham and fry for 5 minutes, stirring frequently. Take the pan off the heat

  4. Mix in a bowl eggs, sour cream, ricotta cheese, parmesan, chopped parsley and spices

  5. Strain the pasta and place in a clean pan. Add the ham mixture and mix well. Add the egg mixture and let the composition simmer, stirring constantly, until the eggs are lightly done. Sprinkle with the remaining Parmesan cheese and serve immediately

Potatoes in Carbonara sauce, in the oven. Alas, how good they can be!

Necessary ingredients:

500 g white potatoes
50 g race parmesan
3 egg yolks
180 g cream
150 g grated cheese
75 g bacon
1 red pepper

a bunch of fresh parsley
salt and white pepper to taste

Method of preparation:

Boil the potatoes in salted water for about 15 minutes, then take the potatoes out of the water, let them cool a bit and peel them.

Cut the potatoes into cubes.

Mix the cream with the yolks, Parmesan cheese and grated cheese, season with salt and pepper.

Saute the bacon cubes for 2 minutes, then add over the potatoes, do the same with the finely chopped pepper.

Stir, then transfer the mixture to a non-stick pan and pour and cream the mixture over the potatoes.

Sprinkle with the washed and finely chopped parsley, then put the tray in the preheated oven at 200 degrees Celsius, and bake for 25 minutes.

Remove the pan from the oven, let the potatoes cool a bit, then we can serve.
